Ingredients

2-3 tbsp olive oil

⅓ cup red wine vinegar

¼ tsp dried oregano

1 tsp sea salt

¼ tsp black pepper

1 tsp maple syrup

1 can (15 oz) Cannellini beans

1 can (15 oz) Kidney beans

1 can (15 oz) Chickpeas

1 cup dried celery (4 stalks)

¾ cup red onion, diced

½ cup chopped parsley

 

Instructions

  • Drain and rinse all beans; set in a large bowl
  • In a smaller bowl, mix olive oil, vinegar, oregano, salt, pepper, syrup
  • Combine all the above ingredients
  • Stir in celery, onion, parsley
